Last weekend I had a Ladies Wine Night here at the house. One of my neighbors brought over an appetizer and I just had to get the recipe.
I’ve seen variations online for this recipe. Some call it Cowboy Caviar, others Texas Caviar and even Aztec Salsa. Whatever you call it, I call it “Freakin Good”!!
2 avocados peeled, pits removed and chopped
1/4 cup red wine vinegar
1 15 oz can black beans, rinsed and drained
1 11 oz can Mexican style corn
3 tomatoes seeded and chopped (she said she uses only roma tomatoes)
3 green onions, sliced
1 small red onion, chopped
1/4 cup olive oil
1 (0.7 oz) packet of dry Italian-style salad dressing mix
1. Lightly combine the avocados with the red wine vinegar in a salad bowl. Stir in the beans, corn, tomatoes, green and red onion.
2. Whisk together the olive oil and salad dressing mix in a bowl and pour it over the avocado mixture and toss lightly.
Serve with tortilla chips of your choice
*Tip: if you put the avocado seed in the middle of the bowl, it will prevent the avocado in this dish to stay green and not brown!
