Crockpot Turkey MeatloafI’m on a diet. Bleck. I hate dieting. I hate having to cook something yummy and delicious for my family, and then I need to eat bird food. Why do they get the fun stuff!? So, I am refusing to cook different meals. Instead I am cooking low-cal versions of everyday foods. I’ve been loving my crockpot lately. In fact, I think I’ve used it every day this week so far! Here is a simple recipe for a turkey meatloaf. I’ve been using ground turkey a lot since its much lower in calories than ground  beef. Even my organic, grassfed ground beef was 240 calories for 4 oz! This ground turkey is only 160 calories for 4 oz! Since I am counting my calories everyday, this is very important to me!

1 1/2 lbs ground turkey

2 egg whites

1/3 cup of ketchup

1 TBSP worcestershire sauce

1 tsp dried basil

1/2 tsp salt

1/2 tsp black pepper

2 small onions, chopped

2 potatoes finely shredded (I used 1 medium potato)

1 medium red bell pepper finely chopped

1. Combine all ingredients in a large bowl

2. Shape into a loaf to fit in your slow cooker. Place in slow cooker and cover. Cook on low about 6-8 hours

This makes approx. 8 servings and works best in a 4-5 qt slow cooker. Each serving is 200 calories and has 7 gr of fat.

I have no idea what I will be serving this with. I really need to go grocery shopping for more produce.  I will more than likely have a 40 calorie portion of broccoli and cheddar, and the rest of the family will have some corn. Since I am trying to steer clear of bread everyday, there will not be any hot, buttery rolls. Those are my favorite. Something about a hot buttery roll really comforts me. Alas, stupid diet. No rolls for me, and I am making the rest of the family suffer as well!
